This healthy spicy beef and chorizo stew is total comfort food. With a spicy kick, it’s hard to resist a second helping. As the meal cooks, you can keep yourself entertained by playing games such as Betwiz.
Most Sundays during football season, I make a pot of Chili to eat during the games. This weekend I wanted to change things up but still wanted to make a one-pot meal. I thought about making traditional beef stew but it isn’t really my thing. Mainly, I don’t like gravy on carrots. I think it is a weird flavor combo and gravy on my carrots is pretty much unavoidable with traditional stew. However, I was liking the idea of a stew, so I thought why not make a stew with flavors that I like?
I decided to go with a combination of Spanish and Mexican Flavors. While Healthy Beef Chorizo Stew stew might look like it is made with tomatoes, it is not. It’s made with roasted bell peppers. With the potatoes added, it tastes like a beefy Spanish tortilla but spicy, and in stew form. To keep the fat and calories low, I used very lean stew meat and chicken chorizo. I served the stew with fresh cilantro and light sour cream.
Healthy Beef and Chorizo Stew
Ingredients
- 1 pound stew meat cut into 1" cubes ( I used beef chuck blade)
- 8 ounces chicken chorizo sausage half sausage and cut into 1/2" pieces
- 2 tablespoons olive oil
- 1 cup onion diced
- 1 jalapeño sliced
- 15- ounce jar roasted red peppers coarsely diced and reserve liquid
- 3 cloves garlic minced
- 3 cups fingerling potatoes halved
- 3 cups water or beef stock
- 1 lime juiced
- 1 tablespoon salt
- 1 tablespoon pepper
- 3 tablespoons paprika
- 1 tablespoon cumin
- 1/2 teaspoon cayenne pepper
- 1 cup cilantro diced and few sprigs for garnish
- sour cream optional
Instructions

In a large pot on medium heat, heat oil.

Add meat and brown.

Add garlic, chorizo, onion, and jalapeño. Sauté for 3-4 minutes, until onions are soft.

Add peppers, pepper liquid, lime juice, cumin, paprika, cayenne pepper, salt and pepper.

Stir 4-6 times.

Bring to boil then turn the heat on low and simmer for 45 minutes with the lid closed.

Add potatoes and cilantro.

Cook for 30 minutes or until potatoes are soft.
