Baseball and apples in October, that’s what I’m talking about. Can you believe it…the Cubs won the pennant? Holly COW! Chicago is busting at the seams with joy right now. World Series here we come.
In addition of the baseball fever, we have been having some of the most perfect fall weather. Cool and sunny, it’s been just amazing. Last weekend the combination of great weather and seasonal fall ingredients inspired me to make savory sweet dish using local apples and vegetables picked up at the farmers market. I roasted a pork tenderloin marinated in a smoked apple butter that created the most amazing sticky sweet glaze. The end result was a bright fall meal, easy on the calories and heavy on the flavor. A large portion of vegetables and 4 oz of pork comes in at a low low 4 Smart Points per serving. Go ahead, have seconds!

Recipe Notes
You can add any vegetables you like to this dish. If you desire to add a starchy vegetable I recommend sweet potatoes.
This recipe is 4 smart points for a 4 ounce serving of meat and a heaping 1/2 cup of vegetables. Adding more non starchy vegetables will only change the point count if more butter is added.
