Last year Charlie went fishing in Alaska. His haul was over 30 pounds of salmon. At this time I should probably mention that Charlie does not eat cooked fish filets. As the sole salmon consumer in the house I’ve experimented with many preparations. Grilled salmon, baked salmon, poached salmon, broiled salmon, smoked salmon, smoked salmon spread…I’m like Bubba from Forrest Gump except instead of shrimp I’m a salmon aficionado.
This smoked salmon spread recipe is one of the most basic yet most delicious salmon preparations I have cooked this year. With only 5 ingredients, it is a healthy protein rich alternative to fattening dips. I love it on cucumber as a snack but it can also be used as spread on bagels or on a sandwich.
Smoked Salmon Spread
Ingredients
- 6 oz smoked salmon
- 1 package reduced fat cream cheese
- 1 teaspoon worcestershire
- 1 scallion finely minced
- 1 teaspoon salt
- 1 teaspoon pepper
Instructions

Soak a wood grilling plank for 1 hour.

Place salmon on plank and season fish with salt and pepper.

Grill salmon on a low grill for 20-30 minutes or until salmon is cooked though.

Cool salmon.

In a bowl, flake salmon and discard skin.

Mix a package of cream cheese, worcestershire and scallions with salmon. Combine until mixed throughly. Season with additional salt and pepper to taste.
