The weather has finally warmed up here in Chicago and I’m dreaming of sunny summer days which leaves me with cravings for a light and bright salads. This salmon salad fulfills that craving 10 fold. The fresh dill makes the salad super fresh. It has just the right about amount of mayonnaise to make it creamy and compliment the salmon. I I love adding hemp seeds for a bit of nuttiness.
What I really love about this salad, the portion size. You get a HUGE portion for less than 400 calories. I usually eat this salad with crispy crackers. I’m old school and like simple saltine crackers. Though you could tops a crisp leafy green salad with big ole scoop or put some between two slices of whole grain bread. Anyway you decide to eat it, enjoy!
Dill Salmon Salad
Ingredients
- 2 large salmon filets about a pound
- 2 cups white wine
- 4 stalks of celery finely diced
- 4 scallions sliced thin
- 1/4 cup of fresh dill
- 1/4 cup hemp seeds or crushed flax seeds
- 1/4 cup mayonnaise
Instructions

In a large pan on medium heat bing white wine to a boil. Add salmon and turn heat down to a simmer. Cooked for 10 minutes or until cooked though.

Drain salmon and let cool. Once cooled remove skin and flake meat.

In a large bowl add salmon, celery, scallion and dill. Mix until combined.

Add mayonnaise and mix until combine.

Place in refrigerator for 2-3 hous to chill.

Remove from refrigerator and mix in hemp seeds until combined.
