Lately I’ve been on rice kick. I’ve been experimenting with ways to jazz up rice. When I originally made this dish I omitted the ground lamb and served the rice as a side dish with pan roasted chicken (delicious too). The following day I took a hodge lodge of leftovers to work. I packed a burger and the rice. I ate the burger on top of the rice and it got me think how tasty the rice would be with ground lamb mixed in.
A new dish was born. This dish makes great leftovers too. And if you’re a vegetarian just omit the lamb. Eat as a side dish or eat as a main dish, its up to you.

Greek Fried Rice
Prep Time 10 minutes
Cook Time 20 minutes
Servings 6 servings
Ingredients
- 1 pound ground lamb
- 1 red bell pepper diced
- 1 onion diced
- 2 cups long grain rice white or brown - your preference
- 2 tablespoons olive oil
- 1/4 cup walnuts pieces
- 1 teaspoon salt
- 1 teaspoon pepper
- 2 tablespoon fresh oregano or 2 teaspoon dry
- 1/2 lemon juiced
Instructions

Cook rice according to instructions on package, set aside and let cool.

In a large pan head olive oil, brown lamb.

Add red pepper and onions. Cook until tender.

Season with salt, pepper, lemon and oregano.

Add rice and combine. Let cook for 2-3 minutes or until the rice on the bottom of the pan becomes a little crispy.

Mix in Walnuts.
