I love Chinese food but the reality is that it is not the most calorie friendly food. For that reason, I love to take Chinese flavors and infuse them into healthy dishes. Lettuce wraps are great healthy dinner that combined with a side dish (sesame lime noodles are a great choice) makes a complete, filling, low calorie meal.
These lettuce wraps have a good dose of Hoisin, spice and peanuts giving them a kung pao flavor. While not a traditional Chinese Dish, they are super tasty. And the portion size on these are pretty large, so you can indulge without any guilt. A quarter of this recipe comes in at less than 350 calories. YES!!!! that is a lot of food. So enjoy!

Chicken Lettuce Wraps
Prep Time 10 minutes
Cook Time 20 minutes
Ingredients
- 1 head bib or butter lettuce leaves washed and dried.
Filling
- 1 pound of ground chicken
- 1/2 cup water chestnuts diced
- 1 tablespoon sesame oil
- 3 shallots sliced thin
- 2 garlic cloves minced
- 1 teaspoon minced fresh ginger
Sauce
- 1 tablespoon Chinese black vinegar or you can substitue balsamic vinegar
- 1 teaspoon soy sauce
- 1 teaspoon hoisin sauce
- 1 teaspoon sesame oil
- 1 teaspoons agave nectar
- 2 teaspoon crushed red pepper pepper
- 3-5 chilies - optional
Garnish
- Cilantro leaves
- Peanuts
- 1/4 cup unsalted dry-roasted peanuts
Instructions
Sauce in a bowl whisk together vinegar, soy sauce, hoisin sauce, sesame oil, agave nectar and crushed crushed red pepper pepper. Reserve
Filling

On high heat, heat sesame oil. Turn heat to medium.

Add shallots, garlic and ginger. Cook until shallots are soft.

Add ground chicken and cook until browned. Mix chicken so that it does no form large lump. DO NOT DRAIN.

Add water chestnuts. Cook until hot.

Add sauce and peanuts. Mix thoroughly until combined.
Wrap

Place filling in lettuce. Tpp with cilantro (optional).
