Happy Chinese New Year! Welcome year of the fire monkey!
Chinese New Year celebrates the Lunar New Year which says goodbye to winter and the year past and rings in the spring and a fresh year. Making wishes for luck, prosperity and good fortune while warding off evil spirits are central to many Lunar New Year traditions. It’s time to start fresh with hopes for luck and happiness.
Food is an epicenter of traditions that celebrate luck and a long, healthy life. And one of my favorite foods of all time, noodles, are good luck and represent longevity. Heck Yeah! I never met a noodle I didn’t like and they are lucky. TOTAL BONUS.
Vegetarian Hoisin Lo Mein Noodles
Ingredients
Sauce
- ¼ cup hoisin sauce
- 1 tablespoons soy sauce
- 1 tablespoon rice wine vinegar
- 1 teaspoon chili garlic sauce more for more spice
Noodles
- 1 pound lo mien noodle cooked al dente (you can use spaghetti as an altertive)
- 1 eggplant cut into 1 inch pieces
- 1 cup straw or shiitake mushrooms or a combination of both cut into large pieces
- 1 cup baby corn cut into 1 inch pieces
- 1 cup water chestnuts diced largely
- 1 tablespoon sesame oil
- 1 tablespoon crushed garlic
- 1 tablespoon grated ginger
- 3 shallots sliced thin
Instructions
Sauce

Whisk all ingredients in a bowl and reserve
Noodles

In a large wok or frying pan, heat pan then add oil. Turn heat to medium.

Add garlic, shallots and ginger. Cook until shallots are soft.

Add eggplant, corn water chestnuts. Cook until eggplant is soft.

Add sauce and combine with vegetables

Add noodles and combine until noodles are mixed with vegetables coated with sauce.

Plate and Enjoy!
I created this simple noodle dish using lo mien noodles and traditional Chinese ingredients. I could eat this dish for days, and I do because it makes fantastic leftovers. Enjoy!
