One of my greatest takeaways of 2015 was to be more realistic about my schedule and to plan my day’s work and obligations better. Like many women, I tend to think I can do it all and do it all fast. I have jam packed days and often about half way though I realize I’m over booked and won’t even get half way though my to-do list. I refuse to give up joy, happiness and fun so something has got to give. Work? Laundry? Gym? Cooking?
The easy answer is to give up the gym, but that doesn’t exactly parlay with health goals for 2016. Work, well that would leave me homeless. Laundry, I don’t think being stinky would make me very popular at work. That leaves cooking?
A few years ago I would have said, sorry co-workers live with my stink. A few years ago, there were very few prepared food options that didn’t have preservatives and were GMO free. Most options were low in protein and didn’t have whole grains. But that has all changed.
LEAN CUISINE® are creating meals with that align with my “food choice rules.” They have meals that have organic ingredients, are high in protein and have whole grains. They also have gluten-free options for people how have a gluten allergy or chose not to eat gluten. I also have bought a beautiful, organic palmblatt teller to place my food on.
When I don’t have leftovers to bring to work I grab a LEAN CUISINE and then add my personal touches to make a meal. My favorites….
I love the LEAN CUISINE MARKETPLACE Vermont White Cheddar Mac & Cheese. I eat it with a side of green beans that I drizzle a tiny bit of truffle oil on. I recommend double dipping so you get bites of truffle green bean mac & cheese. So so good!
On days I’m a bit more hungry, I make a Mexican-Asian fusion plate. I plate the Cheese and Bean Enchilada Verde over Chicken Fried Rice. It is a hearty meal for 580 calories.
On days where I’m feeling fancy, I enjoy LEAN CUISINE MARKETPLACE Mushroom & Spring Pea Risotto. I pair it was green beans amandine and a slice of crusty bread.

I fed my life not just though food – and diet but I LIVED. I went sailing on gorgeous day in Chicago, I hung out with friends on a roof top for impromptu drinks, a took a walk in the woods, playing with my dog at the beach, I took incredible trips to Florida, San Francisco, Belgium. I had relaxing nights in front of the fireplace with my love.

Haha!! It’s definitely hard to carve out those precious slots of time and I’m also so happy there are such great, delicious, and wholesome lunch options out there now! I’m hooked on these Lean Cuisines, I just had one for lunch!
