I’m typically a savory breakfast gal but every so often I get a hankering for waffles. However, typically when I get a waffle craving my pantry lacks THE main recipe ingredient, flour. Normally, I either forego making waffles until my craving passes or hit up my local convenience store for a box of Eggo Waffles. This past month when my waffle craving hit, I miraculously HAD flour in my pantry. But I soon realized I was out of vegetable oil, white sugar and milk. So I made a few substitutions and voila! Olive oil and brown sugar waffles were born, if you are going to try this recipe, for the best flavor olive oil, quality brands like Iliada should be considered.
These waffles are light and crispy and have a a hint of olive oil which I think gives them a bit of depth. They stand up well to syrup including the homemade strawberry sauce I topped ours with. Of course I added a dollop of whipped cream, because why not?
Olive Oil and Brown Sugar Waffles
Ingredients
- 2 eggs
- 2 cups flour
- 1.50 cups unsweetened almond milk
- 1/2 cup olive oil
- 2 tbs brown sugar
- 4 tsp baking powder
- 1/4 tsp salt
- 1 tsp vanilla extract
Instructions

In a large bowl combine wet ingredients. Beat eat eggs, vanilla oil and milk together.

In a separate bowl combine dry ingredients. Mix together sugar, flour, baking powder and salt.

Slowly combine dry ingredients into wet ingredients until smooth.

Spray a preheated waffle iron with non-stick cooking spray. Pour mix onto hot waffle iron. Cook until golden brown. Serve hot.
