Last week Charlie sent me some really complicated recipe for plantains…it required 50 steps and a zillion ingredient. Okay maybe only a million ingredients. Needless to say, it was complicated and time consuming and I didn’t make it. But I’m not a plantain scrooge so I made them my way, the simple way.
Since plantains are more like a potato than a banana I decided to roast them in the oven with a little onion, garlic and oil. The plantains I used were Pinton (yellow with a few brown spots). They were still firm but a little sweet. They turned out fantastic.

Roasted Plantains in Garlic (Mojo) Sauce
Prep Time 11 minutes
Cook Time 11 minutes

Ingredients
- 5 large plantains peeled and cut into 1" cubes
- 1 large onion sliced
- 2 gloves garlic crushed
- 1 tsp ground cumin
- 1/4 olive oil
- 1 tsp salt
- 1 tsp pepper
Instructions

Preheat oven at 400-degrees.

In a bowl place plantain and onions. Mix in oil, cumin and garlic.

Place plantains and onions in a baking dish, add mix

Bake 20 minutes, flipping the pieces over halfway through the baking.

Salt and pepper to taste.
