Winter always bring out the baker in me. Perhaps it’s the ideal baking conditions (cold and dry) or maybe it’s my craving of carbohydrates, but I love to bake in the winter.
I had some bananas that were past their prime laying around the house this weekend so I whipped up a batch of muffins. These banana spice muffins are less than 250 calories and loaded with oat bran and oats. They make a great snack or a quick grab n’ go breakfast.
makes 12 servings
Ingredients:
3 ripe mashed bananas
2 cups flour
1 1/2 cups oat bran
1/2 cup oatmeal
1/2 cup apple juice
1/2 cup oil
1/2 cup sugar
1 tsp ground ginger
1 tsp ground cinnamon
1 tsp ground cloves
1 egg
2 tsp baking powder
Instructions:
Preheat oven to 375 degrees.
In a large bowl, mix wet ingredients (bananas, apple juice, oil and egg).
In a separate bowl, mix dry ingredients (flour, oat bran, oatmeal, sugar, ginger, cinnamon, cloves and baking powder).
Slowly add and mix dry ingredients to wet ingredients.
In a greased muffin pan add 1/2 cup of batter to each muffin cup and bake at 375 degrees for 30-40 minutes (or until brown and a toothpick can be inserted and removed cleanly).

Do you think I could replace the banana with pumpkin? I dislike bananas immensely.

You could defiantly use pumpkin puree. You could also use apple sauce and make an apple spice muffin. If using apple, I’d even dice up a whole apple and add it to the recipe. Cooking time might need to altered if using apple sauce.
