Some night I just throw dinner together with what I have in cupboards with very little thought. Some nights it sucks is not the best and some nights my random concoctions are super yummy. This dish as a sweet, spicy and tangy. I think it is a cross between Pad Thai and Peanut noodles. And the portion size is HUGE.
Makes 6 servings
Ingredients:
1 package rice noodles
1 lb ground pork (you could also use chicken or turkey)
2 tbs sesame oil
1/2 cup natural peanut butter
1 cup broth (beef, vegetable or chicken)
1 cup shredded carrots
1 cup sliced green onion
1 diced red pepper
3 tbs garlic chili sauce (use less for less heat)
1 tbs fish sauce
1 tbs soy sauce
1 tbs rice wine vinegar
1 tbs sesame seeds
Instructions:
Place rice noodles into a large bowl and pour boiling water over them and then cover. Let stand for 10 minutes or until softened.
Heat oil in a large skillet over medium heat and saute pork until browned, about 4 minutes. Add carrots, green onions and red peppers and saute for about 4 minutes.
Whisk together water, peanut butter, stock, vinegar, soy sauce, fish sauce and chili paste and pour into skillet, bring to a boil.
Drain noodles and add to skillet. Cook for about 3 minutes or until coated well.
Sprinkle with sesame seeds before serving.
