Ptitim is more commonly known in the US as Israeli Couscous. I love the texture of Israeli couscous; the little peals are fun to eat. The pine nuts and raisins in this dish add a nutty sweetness to the couscous that is well seasoned with melted butter and a light saffron broth. Warning: this dish is addicting and multiple servings might be eaten.
Ingredients:
2 tablespoons butter
1/2 teaspoon saffron threads, crushed
1 cup uncooked Israeli couscous
1/4 cup pine nuts, toasted
1/4 cup golden raisins
1/4 cup hot water
Salt and pepper to taste
This recipe reheats well.
