Ingredients:
9 oz package dry Farro (about 3 cups cooked)
2 cups mirepoix (2 carrots, 2 stalks of celery, 1 small onion, diced)
2 tbs of sesame oil
1 cup apple juice
3 cloves of garlic (chopped)
3 tbs of ginger (chopped)
makes 6 servings
Directions:
Cook farro according to directions on package. Rinse and drain.
In a skillet, heat sesame oil on medium heat. Add mirepoix, garlic and ginger. Cook for 2-3 minutes on medium heat. Add apple juice and cook until vegetables are cooked but still firm (about 5-7 minutes). Add cooked farro and mix well.
This recipe reheats well.
