The hardest part of cooking this dish is thawing the sausage. This easy and tasty pasta dish cooks up in minutes. It great for a night when you want a wholesome meal fast. I like to use spinach and tomato fusilli for an extra flavor kick.
Ingredients:
13 oz box of Fusilli
13 oz box of Fusilli
1 lb pork sausage (you can substitute chicken or turkey sausage)
1 bell pepper
1 small onion
4 tbs parsley
8 oz Bocconcini
juice from 1 lemon
4 oz white wine
1 tbs olive oil
3 cloves garlic
makes 6 servings
Directions:
Cook pasta according to package. Rinse and drain.
In a skillet on medium heat brown sausage. Add peppers, onions and garlic, cook for 5-7 minutes until tender. Add parsley, spinach, lemon juice, white wine and olive oil. Cook on low heat for an additional 1-2 minutes or until spinach is wilted.
Combine pasta and sausage pepper mixture. Mix in bocconcinis and cook on low for 2-3 minutes until bocconcinis are warm and starting to melt.
I like to serve this dish with a simple salad and some bread. This dish also reheats well as leftovers.
