Salad rocket, roquette, rucola, rugula, colewort. How we ended up calling the delicious green arugula is beyond me? Personally I think salad rocket is a much better name. Salad rocket is actually an herb and has a wonderful peppery taste. It pairs well with sweet citrus, nuts and seeds.
Arugula loaded with antioxidants and is rich in Vitamins A, C and K.
Ingredients:
6 cups baby arugula

2 green onions (sliced thin including grees)
1/4 cup toasted pumpkin seeds
2 oranges (sectioned)
1 tbs olive oil
1 tbs lemon juice
1 tsp lemon zest

Toasted Pumpkin Seeds:
In a skillet on low heat toast pumpkin seeds. When they start to pop you will know they are done. Let cool.
Salad:
Toss arugula, onions and sectioned oranges in a large bowl.
Dressing:
Combine teaspoon of lemon zest, olive oil, lemon juice. Squeeze the remaining juice out remnants from sectioned oranges. Whisk or stir for 1 minute.
Construction:
Dress salad with dressing. Toss. Add cooled pumpkin seeds. Toss. Salt and pepper to taste. Toss.
