I LOVE CHEESE. REALLY! LOVE CHEESE
This past Saturday Charlie and I left downtown to check out The Great American Cheese Collection. It is the single largest source for America’s specialty cheeses and the first Saturday of each month they open their doors for a cheese tasting and market.
I really had to restrain myself and only bought three slivers. I selected three lovely cheeses.
Full Moon – from Pat Morford ; 8 oz. goat milk camembert; white bloomy rind; full flavored; runny under the skin
Headwaters Tomme – from Kokoborego in Ohio and is a semi aged cow milk cheese with veins of ash running through the center much like a Morbier. Semi soft and creamy with a delicate flavor profile.
Barick O’Bama Lazy Lady– Vermont. Jersey cow milk with added cream; 14 oz square; red rind washed with local dark brown ale; lightly salted; mechanical openings in a deep yellow flesh; semi-soft, slightly elastic; complex big flavors; even though there is a yeast rind this cheese is not stinky; farmstead; organic

I love cheese. I is one of my favorite things to eat. I could live on bread a cheese.
