I love pizza. It ranks in my top 3 foods to eat. It is right up there with fresh bread and butter and really good homemade pasta and sauce. LOVE IT.
However, pizza is not the most waist friendly food. My issue isn’t the actual calories, it’s portion control. WHO THE HELL eats ONE slice? I don’t care how much damn salad you have on your plate ONE slice is not enough.
A trick I learned a few years ago is to make pizzas out of pita or lavash. Not only is it a quick option but, it also provides for portion control. Cut back on the cheese and load up on the veggies. Instead of sausage use seasoned ground meat that you render the fat out of.
This month in our meat CSA we got one pound of ground goat. I seasoned it with salt, pepper and crushed red peppers and rendered it (fry then drain fat in a sieve) to make this delicious double goat pizza.
Ingredients
1 lavash
3 oz ground goat (sub ground lamb, beef or turkey)
1/2 oz goat cheese ( I used Humboldt fog…because life is to short to drink cheap wine or eat cheap cheese)
1/2 oz mozzarella
1/4 roasted red pepper
1/4 onion ( I pre cook so they are tender)
1/4 cup tomato sauce
basil (chopped)
On one lavash I spread 1/2 cup of tomato sauce. I then spread the toppings (I had extra points so I added a little extra cheese and meat). I bake it in the oven at 425 degrees until the cheese is melted and the crust is crispy.
Delicious, 10 points (12 with my extra cheese and meat) and worth every single one of them!!!

I have been know to eat an entire pizza on my own.
AND I will not even go into telling you about my participation in Pizza Hut’s “ALL YOU CAN EAT” specials…
and you pizza looks SO GOOD .

lavash is a flat bread. Its thinner than pita.
