Sweet Potatoes are a great complex carbohydrate as they are high in fiber and have beta carotene, vitamin C, and vitamin B6. According to Wikipeida, the Center for Science in the Public Interest compared the nutritional value of sweet potatoes to other vegetables. Considering fiber content, complex carbohydrates, protein, vitamins A and C, iron, and calcium, the sweet potato ranked highest in nutritional value. According to these criteria, sweet potatoes earned 184 points, 100 points over the next on the list, the common potato.
When given the choice, I will almost always choose sweet potatoes over a regular potato because they are so darn good for me. Its always easy to pop one in the oven and bake, but sometimes I want something close to a sweet potato fry. I came up with this recipe to fill my craving.
Ingredients:
1 large Sweet Potato
2 TBS Salted Butter
4-6 sage leaves (chopped)
Salt and Pepper

Optional: 1 small apple
Thinly slice (but do not mandolin) 1 sweet potato. (short cut) Pre-cook sliced potato in covered container in microwave for 4 minutes.
Thinly slice 1 small apple
Add sweet potatoes to brown butter and sage. Potatoes will brown and become crispy. After 4-5 minutes. Add apples when potatoes start to brown.
This can be served as a side dish (makes 2 servings) or as a meal for one. Top with 1 tsp of butter. Enjoy!
