I love one pot meal, less dishes, whats not to like. I also love Cajun flavors. Cajun stew is a wonderful one pot meal and the left overs are fantastic.
Ingredients:
2 Andouille Sausage Links
1 Chicken breast
1 lb raw shrimp with tails off
1.5 cups okra cut into bit sized pieces
1 green pepper diced
1 small onion diced
3 stalks celery diced
large can of diced tomatoes
large can of tomato sauce
1/2 c chicken stock
3 cup quinoa
Cajun seasoning
cayenne pepper
cooking oil
In a pot saute the onion, green pepper and celery. When vegetables are par cooked, add chicken and sausage.
Cook chicken and sausage till brown. Deglaze pan with chicken stock.
Add crushed tomatoes and tomato sauce. Bring to a boil. Simmer for 20 minutes.
Add okra and shrimp. Simmer for an additional10 minutes. Stir in quinoa.

I like quinoa b/c its a little chewy and add a nutty flavor
