I make rice in big batches so I just need to re-heat it for dinner. But plain brown rice is kind of boring. I love to give my rice big flavors with little effort. This recipe takes about 5 minutes to make if you use pre-made rice.
Delane’s Southwest Rice Ingredients:
2 cups rice (I prefer brown but can be any, quinoa, bulgur or barley also substitute well)
1 tomato diced
1 small onion diced
1/2 cup cilantro chopped
1 TBS Olive Oil
1 TBS Paprika
2 tsp Ground Cumin
Salt and Pepper
1/4 cup water
In olive oil brown onions and diced tomato on medium heat (takes about 2 minutes). Add rice mix in paprika and cumin. Heat for 1 minute, add water. Heat for 1 minutes. Add chopped Cilantro and mix. Heat for 1 minute. Salt and Pepper to taste, Enjoy!

Mmm, that looks good! I’m always looking for ways to jazz up rice. And I like brown rice, but it always takes me about 7 years to cook it. Any tips?

Shea, b/c brown rice takes so long to cook I make it in big batches usually 12 servings and then freeze 4 servings in a container. This way I have it on hand and it only takes a few minutes in a pan or microwave to reheat. Its also A LOT cheaper than the premade stuff in bags at the super markets.
