Delane’s Sweet and Hot Scallops and Pasta
It was a little sweet, a little salty, a little spicy with big herb flavor.
I bought a pound a bay scallops (on sale at whole paychecks) ans wasn’t sure what to do with them. I looked up a few recipes but was uninspired to make any of them. So I ended up creating my own recipe. And it was really really really good.
Ingredients:
1.5 TBS Coconut Oil
1 Bell Pepper diced ( I used yellow)
1 small onion diced
1 lb of bow tie pasta
1 lb of bay scallops
1 can of mushrooms (could use fresh, but I used canned)
1/2 cup of grated parmesan cheese
1 TBS Hot Chili Garlic Sauce
1/2 cup Thai Basil
Salt and Pepper to taste.
Cook Pasta according to package
While pasta cooks heat 1 TBS oil, add peppers and onions till cooked. Remove.
Heat other 1/2 TBS oil, cook scallops. Combine peppers and onions. Combine mushrooms and hot chili sauce and basil. Heat for 1 minute Combine pasta. Combine parmesan. Salt and pepper to Taste.
Eat!

The coconut oil gives the dish a great sweet exotic flavor.
