Chicken Tacos with Fire Roasted Red Peppers and Goat Cheese are a unique take on traditional chicken tacos. With bold flavors, you would never expect these tacos to be less than 350 calories for a two taco serving.

Ingredients
  • 1.5 pound Chicken breast sliced thin
  • 2 Red Peppers or 1 jar Fire Roasted Red Peppers sliced thin
  • 1 small log goat cheese
  • 1 small onion sliced
  • 2 teaspoons cumin
  • 2 teaspoons paprika
  • 1 teaspoons cayenne pepper
  • 2 cloves crushed garlic
  • 4 teaspoons of  vegetable oil
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 12 corn tortillas
  • 1 lime for garnish
  • 1 bunch cilantro for garish
Instructions
Roast Red Peppers
  1. Cut peppers in half and remove pith and seeds.
  2. Place peppers on a sheet pan and place under broiler for 10 minutes.  Flip peppers after 5 minutes.
  3. Remove from pan, let cool and slice thin
Tacos
  1. In a large skillet over medium heat, heat oil.
  2. Add onions and garlic.  Cook until soft.  Add peppers and toss until combined.
  3. Remove from pan.
  4. Add 2 teaspoons of oil to pan
  5. Add chicken and spices.  Cook 6-10 minutes, until browned and firmly cooked through.
  6. Add sliced peppers and onions.
  7. Serve with fresh tortillas and crumbled goat cheese.
Recipe Notes

I served with fresh limes and cilantro for garnish.
