When I was growing up my family would get carry out from a restaurant that made the best Greek lemon chicken. It was always super delicious but a bit on the greasy side (which is why it might have been so awesome). What I loved about the chicken was the lemon and oregano flavor. Oregano has an earthy flavor that pairs really well with the acidity of the lemon. Salt, pepper and garlic..it was the perfect chicken.
With a health conscience mind, I’ve recreated the flavors of that chicken. Instead of whole birds with the skin and fat on, I use skinless chicken breasts Instead of rotssarie the grilling, I oven roast. For extra lemon flavor, I bake the lemons with the chicken. I use fresh oregano for a mild earthy flavor. The results are succulent healthy chicken breasts. I highly recommend eating the lemons. The fruit caramelizes and the rinds get a bit charred. They make the dish.
Easy Baked Lemon Oregano Chicken
Ingredients
- 6 boneless skinless chicken breasts
- 2 lemons
- 2 tablespoon olive oil
- 1 tablespoon salt
- 1 tablespoon fresh ground pepper
- 1 tablespoon garlic powder
- 2 teaspoons crushed red pepper
- 6 sprigs of oregano stems removed
Instructions

Preheat oven to 425° Fahrenheit.

On a baking sheet place chicken breast.

Drizzle 1 tablespoon of oil on chicken.

Squeeze the juice of a half lemon over chicken.

Sprinkle chicken with salt, pepper, garlic and crushed red pepper.

Flip chicken.

Drizzle 1 tablespoon of oil on chicken.

Squeeze the juice of a half lemon over chicken.

Sprinkle chicken with salt, pepper, garlic, crushed red pepper, and oregano

Slice one lemon and place slices on top of chicken.

Bake in oven for 35 minutes or until chicken reaches 165° Fahrenheit.
