In the 10+ years that Charlie and I have been together, he has officially cooked me 3 meals in that timespan. Well, that was until last Sunday. Up the counter to 4 and ALL HAIL Charlie’s Habanero Beef Chili.
Before I go on, I must give Charlie credit, he does routinely man the grill and stoke the smoker. He is great at ordering dinner and occasionally helps with the dishes. But chef de cuisine, he typically is not. And why would he be living with me?
So how did meal 4 come about? Well, during our weekly grocery shopping trip he asked if WE could make chili for the football game. Jokingly I told him, “go right ahead.” Surly, he said, “Fine, I will” and then proceed to ask ” Can you buy what I need?” So hand in hand, we shopped for the ingredients.
The next day while making breakfast I walked him through making his first ever pot of home-cooked chili. He still has all 10 of his fingers and no blood was shed while chopping peppers and onions (FYI, his knife skills make me nervous. It was tempting to just take over, but I restrained myself).
The end result was delicious. He served his chili was shredded Monterey Jack cheese, raw onions and some jalapeño cornbread (made by the kind folks at Mariano’s).
Charlie's Habanero Beef Chili
Ingredients
- 1 lb lean ground beef
- 1 16 oz can petite diced tomatoes
- 1 16 oz can crushed tomatoes
- 1 16 oz can pinto beans drained and rinsed
- 1 16 oz can light kidney beans drained and rinsed
- 1 cup brewed coffee
- 1 green bell pepper diced
- 1 medium onion diced
- 2 cloves garlic crushed
- 1 habanero diced with seeds
- 1 tablespoon ground cumin
- 1 tablespoon hot paprika
- 1 tablespoon sweet paprika
- 1 tablespoon chili powder
- 1 teaspoon salt
- 1 teaspoon ground pepper
Instructions

In a large pot on medium heat, brown ground beef.

Add onions and bell pepper, cook for 3 minutes.

Add tomatoes, beans, habanero, coffee, garlic, and spices. Stir until combined.

Bring to a boil then simmer for 3 hours string occasionally.

Serve with your favorite chili toppings. We like cheese and raw onions for this chili.
