I love to use the different types of leafy greens avaible in the summer to shake up my lettuce salad routine. Pea shoots, with a faint pea flavor, are just lovely and need nothing more than few simple ingredients to to make a fresh and flavorful salad.
Blue cheese and crispy bacon enhance the sweet and crispy tendrils. Simple sea salt and extra virgin olive oil perfectly dress the salad. It’s light, it’s salty, it’s creamy and it’s everything you want in a summer salad.
For this salad I used Black Pig Market Co. bacon. I ran across this bacon while visiting Sonoma this past spring. This bacon perfectly crisps and has the right balance of smoke and salt. If your looking for great bacon, I high recommend Black Pig Market Co.
Because the pea shoots have a mild flavor I like to use a milder blue cheese. I don’t want a pungent blue to over power the delicate pea flavor. I really like using cremificato verde capra. It is very creamy and has a rich flavor. It has a mellow tang; it does not overtake the pea flavor and it pairs wonderfully with the salty smokey bacon.
Pea Shoot Salad with Crispy Bacon and Blue Cheese
Ingredients
- 4 cups pea shoots
- 1 tbs olive oil
- 4 slices bacon
- 2 tbs blue cheese crumbles
- 1 tps sea salt
Instructions

Cut bacon in to 1/2 inch lardons. In a frying pan on medium heat, cook bacon until crispy, remove from rendered fat and cool.

Wash, pat dry and dress pea shoots with olive oil and sea salt. Toss salad with bacon and blue cheese.
