So July flew by and so did most of August. I can hardly believe that its going to be my birthday soon …which means about 4 more weeks of summer. Actually we never really had summer in Chicago.
I ended up NOT running the Rock and Roll 1/2 Marathon. The foot took a firm stance and said NO. I was really disappointed. I tried to convince myself that I could do it, walk it..something. But the day before Charlie and I did the Great Urban Race and the little running I did hurt like heck.
I finally went back to the doctor and the verdict was no running for 2 weeks and a follow-up appointment. If …and only if… I’m still getting better then I can start running again. So that means NO 1/2 this fall (as hard as I try I will not be able to train for 13 miles in 5 weeks with NO base). Which just makes me mad and sad and a little happy. I’m a little happy because I don’t need to commit to a training program and I can spend the rest of my “summer” doing other stuff other than preparing to do long runs, doing my long run and then recovering from my long run. When I’m training I feel that all I’m doing is running.
I’ve come to terms that if I get running clearance that I’m going to take it slow and pick up a C25K program from the 15-20 minute point. I’ve also started back taking Bikram (and I’m writing this so I did not die!) and Spin classes. At this point hitting the gym 6 -5days a week is my focus.
In my world of eating, I’m loving the recipes in Clean Eating Magazine. They also have a fantastic 14 day meal plan each month to follows.
I found an awesome recipe for lentil burgers….
2 cups cooked lentils
2 cups cooked brown rice
2 eggs
1/2 cup Greek yogurt
2 tbs whole wheat flour (you can sub any sort of binding flour if your gluten free and I also used about 3 tbs)
mix
add flavoring/seasoning
I added tbs tomato paste and 2 tbs sun dried tomato paste
1 handful chopped basil
1/2 hand full chopped oregano
salt and pepper
I also did some with
salt
pepper
1 tsp Cajun flavor
cilantro
cumin
crushed red peppers (I’d use jalapenos the next time)
i did another batch with black beans vs. the lentils (if you do them, make sure to mash the beans)
I grilled them in a non stick pan with Olive Oil…use a hot pan at fist to get crispy then move to med-low to Cook though. I poured them in a pan with a 1/2 cup measuring cup. I froze the leftovers and have re-heated in a non stick pan.
These got a thumbs up from two of my neighbors.
