For some reason anytime I order Asian carryout I end up with a leftover container of rice and I always feel bad tossing it in the garbage. STARVING PEOPLE AROUND THE WORLD GUILT!— I presume.
If you nuke left over rice in the microwave it becomes a sticky and clumpy, pretty much inedible. However, it makes awesome fried rice. Waste Not, Want Not.
Ingredients:
1 small container left over white rice from an Asian restaurant (mine came from a Thai restaurant)
6 oz cooked pork diced (leftovers from making pork stock, you can use chicken or beef too)
1 small onion
1/2 jalapeno pepper (sliced thin)
1 tbs sesame oil
2 tbs sweet chili sauce
1 clove of garlic
1 tbs fish sauce
2 tbs soy sauce
2 tsp grated ginger
2 tsp rice wine vinegar
makes 2 servings
Directions:
In a pan heat sesame oil on medium to high heat. In the hot pan add onions, pork, garlic and jalapeno pepper. Cook for 2-3 minutes. Add rice. (you will need to break the rice down as it will be a hard brick when you take it out of the container). Cook for 2-3 minutes. Add chili sauce, fish sauce, soy sauce and rice wine vinegar.
You can add just about any meat or vegetable you want to this dish. Sometime I like to add water chestnuts (if I have them in the cabinet) or cabbage (if I have it in the fridge).
