I think the following summarizes about all I have to say about tacos…..
Tacos are mainstay in my house. They are easy to make and there are so many types to explore from Chicken to Roasted Red Pepper and Goat Cheese.
I had some split pork chops from my CSA that I decided to make tacos out of. Charlie is not a huge pork chop fan and I needed to do something that wouldn’t dry out the meat. If you don’t like pork you can substitute chicken or beef easily.
Marinade:
1 juice from one lime
1 tbs cumin
1 tbs garlic powder
1 cup water
1 tbs salt
4 tbs chopped cilantro
Taco:
1 lb pork chops (substitutes: chicken or beef)
1 bell pepper
8 tortillas
Toppings:
8 tbs grated cheddar cheese
cilantro and green onions
Directions:
In bowl combine marinade ingredients and whisk for 1-2 minutes. In a container, layer meat and marinade until meat is covered. Cover container and let chill for 6-8 hours.
Remove meat from container and drain. Cut into bit sized pieces. Seed and dice bell pepper. In a skillet, cook pork on medium heat for 5-6 minutes. Then add peppers and cook for 2-3 more minutes.
Serve on flour or corn taco shells with one tbs of grated cheddar cheese. Top with chopped cilantro and green onions.
I like to serve these tacos with Spicy mango guacamole and chips.
