Beta-carotene also helps protect against macular degeneration and the development of senile cataracts. Ingredients:
2 kiwi
1 carrot
1 cup almond milk (you can substitute other milk products like coconut or rice milk if you wish)
1 tsp agave nectar
1 piece of ginger about the size of a sugar cube
juice from 1 lime
3 ice cubes
makes 1 serving
Directions:
Peel kiwi, carrot, and ginger. Cut the kiwifruit in half and the carrot into 1-inch pieces. Add the kiwi halves, carrot pieces, almond milk, ginger, agave nectar, and lime juice into a blender. Blend on high for 2-3 minutes (or until smooth). Add ice cubes and blend for another 30 seconds.
